For decades, Vietnamese agricultural products have struggled with the challenge of exporting raw materials, resulting in low added value and heavy dependence on market fluctuations. However, at FOODEX Japan 2026,the largest food exhibition in Asia, with the participation of 74 countries, the story is different. Instead of raw agricultural goods, Vietnamese products are presented in a refined and modern way through deeply processed product lines enabled by smart drying technology from SASAKI Smart Technology.

At Tokyo Big Sight, international visitors were impressed by dried Riti chrysanthemum flowers and slices of precious herbs that still retained their original color, shape, and delicate aroma after processing. This serves as clear evidence of mastering core technology to preserve the purest values of Viet Nam’s natural produce.
For Vietnamese agricultural products to enter demanding markets such as Japan or the European Union, the challenge is not just drying, but drying in a way that preserves nutrients. At the exhibition, SASAKI Smart Technology introduced a closed-loop cold drying technology ecosystem, considered a breakthrough solution for speciality raw material regions.
Closed-loop cold drying which helps in preserving medicinal properties: Unlike heat drying, which alters material composition, SASAKI’s cold drying technology retains essential oils and medicinal properties. Products such as turmeric starch, kudzu powder, and flower tea maintain their smooth texture, vibrant color, and original flavor after processing.

Next, the AI-powered smart control system: A key advantage of this technology is process standardization. With thousands of automated drying programs, cooperatives and businesses can operate easily, ensuring all batches achieve consistent quality and eliminating risks associated with manual experience.
Two-stage deep freezing: This solution protects the cellular structure of agricultural products before drying, preventing shrinkage and preserving optimal sensory quality—an important factor highly valued by Japanese consumers.
At the SASAKI booth, strategic handshakes between Vietnamese businesses and global F&B partners highlighted the appeal of deeply processed agricultural products. Many importers from the United States, Europe, and Japan expressed interest in ordering food ingredients such as spices, specialty nuts, and dried herbs processed using this technology.

The application of “Made by Viet Nam” drying technology not only multiplies the value of agricultural products but also enables farmers and cooperatives to better manage harvest timing, reduce pressure to sell fresh produce, and avoid the common issue of oversupply leading to price drops.
“We brought this technology to Japan to affirm that Vietnamese agricultural products can absolutely conquer global markets if supported by the right level of processing technology. This is not just the success of one company, but a confirmation of Viet Nam’s agricultural position on the global food map,” a SASAKI representative shared.
The success at FOODEX Japan 2026 is a positive signal for Viet Nam’s agricultural sector. As deep-processing technology spreads to production regions, Vietnamese agricultural products will no longer rely on “rescue” campaigns.
